Ingredients
2 cups packed herbs (we used basil, rocket & parsley)
1/4 cup walnuts or pine nuts
1/3 cup parmesan cheese
2 cloves garlic
1 – 2 chilies (optional)
2/3 cup virgin olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
Combine all ingredients in a food processor; process until the texture is smooth.
This pesto can be used on pizza, in a dip, as a marinade or dressing, in soups and stews or simply pair with cheese and crackers.
